 It’s no secret that Daryl Thomas, the virtuoso baker of Vy’s Pies, is inspired by family recipes, especially from his mother, whose nickname was Vy. But where did “Shut the Front Door Coconut Pie” come from, I asked him. “It’s my grandmother’s recipe,” he said. “She lived in the country and every time I came in the house, she’d yell ‘Shut the Front Door!’” Every pie has a story, including Southern Emerald Key Lime and Brooklyn Apple.

For his quiches, Daryl always incorporates some Shady Goat cheese. Try “Spinacio” with Shannon Rice’s feta, or “Girls Trip to Tuscany,” with roasted red peppers, Calamata olives, Shady Goat tomato-basil cheese, and first-rate Tuscan olive oil. Paired with spring lettuces from our farmers, you have  a memorable meal in a flash. Don’t forget some super-fresh  bread.

LIGHTEN UP, IT’S JUST SALAD

 Looking for a light, refreshing dressing to top your salads made with gorgeous greens from OBFM this season? Pour over this:

Citrus Vinaigrette Ingredients

1/2 cup fresh orange juice

1/4 cup fresh lemon juice

1/4 cup extra-virgin olive oil

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

Citrus Vinaigrette Method

Combine the orange juice, lemon juice, olive oil, mustard, salt and black pepper in a large lidded jar. Shake until mixed well and refrigerate until ready to use. Shake again just before serving.

Yields 4-6 servings.
