A big welcome to our newest vendor, The Neighborhood Harvest, with lettuces, basil, chard, and microgreens.
Co-owners John Stein, Thomas Vandiver, and Eric Coble emphasize sustainable, pristine, pesticide-and GMO-free products.
Their Suffolk greenhouse features microgreens in living flats or quarter-pound bags. Look for micro basil, a rainbow mix of Asian greens in bright colors, a blend of Oriental mustards, and China Rose micro radish.
They also offer head lettuce, mesclun mix, rainbow chard, baby kale, and arugula in half-pound bags. What started as a homework project in the Business School at William & Mary has bloomed into an exciting addition to the greens-scene in Hampton Roads.
Why not get your greens this week at your neighborhood farmers market? It’s a good habit to cultivate.
RECIPE
PEANUT BUTTER HUMMUS
With Microgreens
In the bowl of a food processor fitted with a steel blade attachment, pulse 1 (19-ounce) can chickpeas, drained and rinsed (about 2-1⁄3 cups), 3 tablespoons canola or vegetable, 2 tablespoons plus 1-1⁄2 teaspoons peanut butter, 2 tablespoons fresh lemon juice, 2 garlic cloves, 1⁄2 teaspoon salt, 1⁄8 teaspoon cayenne pepper, 1⁄8 teaspoon ground cumin and 1⁄8 teaspoon paprika until smooth, scraping down the sides of the bowl as needed. If the mixture is too thick, add a few drops of water at a time until the desired consistency is reached.
Transfer the hummus to a serving bowl and drizzle with 2 tablespoons extra-virgin olive oil. Sprinkle 1 tablespoon fresh micro basil, 1 tablespoon fresh micro radish and 1⁄4 teaspoon freshly ground black pepper over the hummus and serve with crudité or pita bread/chips.
