RECIPE

COLLARDS SLAW

A tasty, unique alternative to slaw made from exclusively from cabbage is my Collards Slaw. The hearty slaw marries two beautiful greens – cabbage and collards, in a zippy dressing that is wonderful as a side dish or a topping for po’ boy or barbecue sandwiches.

In a large bowl, whisk 1/2 cup apple cider vinegar, 3 tablespoons sugar, 2 tablespoons vegetable oil, 1/2 teaspoon salt, 1/2 teaspoon celery seed, 1/8 teaspoon dry mustard, and 1/8 teaspoon freshly ground black pepper.

Stem and shred 1/2 small head of green cabbage, thinly slice 6 collard green leaves, peel and coarsely grate 1 medium carrot, coarsely grate 1/2 small onion, and rough chop a few sprigs of fresh Italian parsley; add to bowl and toss to coat thoroughly.

Cover and refrigerate at least 1 hour. Toss again before serving.
