Fresh mozzarella – only hours old – made personally by an award-winning chef is one of the glories of Old Beach Farmers Market. Rodney Einhorn, chef/owner of Terrapin Restaurant, makes his soft creamy cheese the way chef Angelo Serpe of Pasta e Pani taught him years ago, even before Rodney went to Hyde Park to earn his degree from the Culinary Institute of America.

Rodney, a lifelong advocate of fresh and local food, has been an OBFM stalwart since its earliest days. He also sells baked-this-morning sourdough bread and sorbet made with seasonal fruits. This week he is making both blueberry and peach. Homemade granola, too, both the regular and a new gluten and peanut free granola.

Warning: in tomato season the mozzarella sells out early!

Chef Rodney’s Tomato and Mozzarella Salad (for 6)

1 lb. fresh mozzarella cut into ¼” cubes

3 ¾ lbs. assorted medium to large tomatoes, cored and sliced plus ½ lb. assorted cherry tomatoes, halved or quartered

¼ English cucumber, peeled and diced

¼ cup red onion, thinly sliced

12 – 15 fresh basil leaves

Kosher salt & freshly ground pepper plus fleur de sel and olive oil

Arrange tomato slices in a shallow bowl, season with salt and pepper and drizzle with olive oil. Top with cucumber, cherry tomatoes and mozzarella and another drizzle of olive oil. Sprinkle onion, basil leaves and fleur de sel over entire bowl.
